Cheesy Potatoes & Sausage
Ingredients:
- 1 lb smoked beef sausage
- 2 bell peppers (your choice of color!)
- 1 white onion
- 16 oz frozen shredded hash browns
- ¾ cup heavy cream
- 1 can cheddar cheese soup
- ½ cup sour cream
- 1 packet Ranch dressing seasoning
- 1 ½ cups shredded cheddar cheese
- 2 Tbs cooking oil
Directions:
- Dice: bell peppers, onion, and sausage.
- Lightly saute the sausage, peppers, and onion together in the oil. Once the onions and peppers are tender, add this mixture to the slow cooker. Top with the frozen hashbrowns.
- In a medium bowl, whisk together the cheddar cheese soup, sour cream, heavy cream, and shredded cheese. Pour over the hashbrowns, meat, and pepper/onion mixture and stir well to combine.
- Put on the slow cooker lid and cook on low heat for 3-4 hours.
Using a slow cooker liner will help make clean up even easier.
