Ingredients

  • 1 Pound Rotini or bowtie Pasta
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Vegetable Oil
  • 1 yellow onion Diced
  • 2 Cloves garlic Minced
  • 1 Pound Sage Sausage
  • 4 Tablespoons flour
  • 2 Cups Whole Milk
  • 1 Teaspoon salt
  • 1/2 Teaspoon Pepper
  • 1/8 Teaspoon Nutmeg
  • 1 15 ounce Can Pumpkin (Not Pumpkin Pie Filling)
  • 4 Ounce Cream Cheese Room Temperature
  • Chives For Garnish

Directions

  1. Cook your pasta until it’s al dente. Do not coat in oil as that prevents the sauce from sticking. One exception to this rule, however, is if you’re making the pasta ahead of time.
  2. Heat oil over medium heat, adding onion and garlic and stirring frequently. After everything has cooked for a couple of minutes add the sausage and crumble until completely cooked and browned. 
  3. Sprinkle sausage with flow and stir constantly while you make your roux. Slowly add the milk and whisk until combined. Then bring to a boil and reduce to medium heat.
  4. Add remaining ingredients and heat until thick. Add your pasta and toss then serve in a bowl.
