One of my favorite RV camping recipes is for breakfast bagels! This is a fabulous way to start the day out right with the most important meal of the day – a hearty breakfast! It’s a quick and easy camping recipe to make whether you’re at home or on the road!
Loaded Breakfast Bagels
Ingredients per sandwich
- One bagel
- 2 eggs
- Splash of heavy cream or half and half
- “Everything Bagel” seasoning
- Slice of cheese (your preference, but I prefer cheddar or pepperjack)
- Small handful of greens (spinach or arugula is fabulous)
- 1 Tbs butter
- Salt and pepper to taste
Let’s get started!
- Place the butter in a small skillet and toast the bagel in the butter. Alternately, butter the inside of the bagel and toast it under the broiler. Whatever your preference, get it nice and golden brown! Add the leafy greens to the bagel and set aside.
- Whisk the eggs in a bowl with a splash of cream or half and half. Season with salt and pepper.
- Scramble the eggs in the skillet. When cooked through, transfer to bagel, on top of the greens. Sprinkle with Everything Bagel seasoning and top with a slice of cheese. Enjoy!
This hearty breakfast bagel is also delicious with a thick slice of tomato or avocado (or both!). It’s up to you, but my kids are happy to eat anything with Everything Bagel seasoning on it, so you really can’t go wrong.
