Grab this super easy camping recipe for your next getaway in your new or used RV! This is an easy crowd pleaser for everyone in the family and all you need is a 12” skillet and a spatula. Plus, the base recipe can easily be modified to include fillings and flavors of your choice, so even the pickiest of eaters is satisfied. Read on for our camping recipe for easy quesadillas!
Easy Quesadillas
Ingredients:
- 10” Flour tortillas (2 per quesadilla)
- Shredded cheese: we recommend cheddar, pepperjack, or ‘fiesta’ blend cheese, ½ cup per quesadilla
- Fillings: canned black or pinto beans, canned chicken breast, sliced bell peppers, onions, olives, or anything else!
- A packet of taco or Ranch dressing seasoning
- Butter
- Sour cream and salsa for toppings (optional)
Kitchen tools:
- Nonstick skillet or flat top griddle
- Spatula
- Cutting board and sharp knife
Heat it up!
- Preheat your cooktop or flat top griddle to medium-low heat.
- Lightly butter one side of each tortilla.
- Place one tortilla butter side down into the skillet and immediately sprinkle half of the cheese for that quesadilla over it.
- Add the other fillings of your choice – like a spoonful of black beans, a tablespoon of sliced olives, or some sliced bell peppers. Sprinkle on ½ tsp of taco or Ranch dressing seasoning. Cover fillings with remaining shredded cheese.
- Place the other tortilla on top, buttered side up (non-buttered side should touch the fillings).
- Carefully flip, trying to keep the fillings from falling out the sides. Cook until both sides of the quesadilla are golden brown and crispy, and the cheese inside is nice and melty.
- Remove from heat and let cool for 1-2 minutes. Carefully slice, and serve with your favorite toppings.
Make sure to cook these over medium-low heat. As tempting as it is to cook it a bit faster, tortillas go from golden brown to blackened in a flash, and can get too crispy before the fillings are even heated all the way through. Cooking it “low and slow” is the key to getting a warm, melty, and slightly toasty quesadilla every time.
