Creamy Raspberry Ice Cream
- 2 cups fresh or frozen raspberries, partially thawed
- 1 cup sugar
- 2 cups heavy whipping cream
- 1 cup half-and-half cream
- 2 teaspoons vanilla extract
You’ll also need:
- 20 lbs ice*
- Rock salt*
- Ice cream freezer
- Blender
- Large bowl
- Spatula
*Ice and salt are only needed if you’re using the “traditional” ice cream freezer. If you have an electric ice cream maker with an internal freezing element, no need for ice and salt.
Directions:
- Place partially thawed raspberries in the blender. Pulse until chopped.
- Transfer the raspberries to a large bowl and add sugar, stirring well.
- Add in remaining ingredients and stir to mix well.
- Pour ice cream mixture into ice cream freezer and freeze according to manufacturer’s directions.
- Serve immediately and store any leftovers in freezer-safe containers.
