Kielbasa and Potato Soup
Ingredients:
• 1 tbsp olive oil
• 13 oz fully cooked kielbasa, sliced
• 1 medium onion, diced
• 6 medium yellow potatoes, peeled and cubed
• 1 stalk celery, sliced
• 1 medium carrot, chopped
• 2 cups chicken broth
• 1/2 tsp garlic powder
• 1/2 tsp salt
• 1/4 tsp pepper
• 1 1/2 cups milk
• 1 cup shredded cheddar cheese
• 1 tsp minced parsley
Directions:
In a large saucepan, heat the olive oil over medium-high heat. Add the sliced kielbasa and cook for about 4-5 minutes until browned. Once golden, remove it from the pot and set it aside.
Using the same saucepan, add the diced onion and sauté for around 3 minutes until it softens, soaking up those savory kielbasa flavors. Add the cubed potatoes, celery, carrot, chicken broth, garlic powder, salt, and pepper. Stir everything well and bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and let it simmer for about 15 minutes, allowing the vegetables to soften.
Next, add the milk, shredded cheddar cheese, parsley, and browned kielbasa back into the pot. Stir over low heat until the cheese melts and the soup is heated through—just another couple of minutes.
